Whole Wheat Banana Chocolate Chip Muffins
1 cup (2 sticks) unsalted butter
2 cups granulated sugar
2 large eggs
4 medium mashed bananas
1/3 cup plus 1 tablespoon milk
4 cups King Arthur 100% White Whole Wheat Flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chocolate chips
2 cups toasted walnuts, chopped
Preheat oven 325°F.
1. Cream the butter and the sugar together on speed #3.
2. Add the eggs, banana and milk.
3. Mix dry ingredients together and add to the creamed butter.
4. Add chocolate and walnuts on speed #1.
5. Scoop into 18 greased muffin cups. Bake at 325°F for 20 minutes.
Cool in pan 10 minutes.
**I made 1.5 recipes and it made 48 mini muffins, 12 regular muffins and two bowls of batter for my monkeys. The mini muffins cooked for the full 20 minutes and the regular muffins cooked for 25 minutes. Enjoy! I will say they are better right out of the oven. Mmmmm.. A message from the Phoenix Stake Relief Society President
Relief Society Visiting Teaching Challenge
Please prayerfully read the scriptures and articles listed below. Then, where possible, we ask you and your visiting teaching partner to consider giving extra special encouragement to one or two of your assigned sisters. We are asking you to try to make some form of contact with this sister each WEEK of the month (or 4 weeks in a row). As partners, please pray together and possibly fast, if possible, to allow the Spirit to guide you in your efforts.
